Peas, Onion, Potato Pulao Rice


Peas, Onion, Potato Pilav Rice, or may be Onipo (Onion Potato ) Rice :)
Well call it anything but it tastes fantastic. It is my daughter's favourite dish now. Easy to make but wonderful to eat.
Ingredients:
Rice - 1 cup
Water - 2 cups
Whole Garam Masala - 2 Cardamom, 1 inch Cinnamon, 3 black pepper, 2 Bay leaves, 1 Masala Cardamom
Ginger Garlic paste - 1 Tbsp.
Green Peas - 1/4 cup
Green Chilli - 1 no. Slit into two parts
Onion Julians- 1/2 cup for Rice and 1 cup for Deep frying
Potato thinly sliced - 1 cup for Deep frying
Cashewnuts - 1/8 cup
Maida or Corn flour - 1/4 Cup
Ghee - 2 tsp. for Rice
Oil - As needed for frying Onions and Potatoes
Salt - to taste
Coriander - for garnish
Method:
For Decoration : Deep fry sliced onions (Sprinkle Maida or corn flour over it so that it becomes golden brown and crispy) and sliced pototoes till they are crispy and golden brown in colour. Sprinke salt and Red chilli powder on the fried Potatoes.
For Making Rice - Wash and Soak Rice for minimum 15 mins and can be upto 1 hr. Cook the Rice along with water, ghee and salt completely in a pot. Take another pan for making the tempering for the rice, heat the 2 tbsp oil into the pan and add whole garam masala into it to release the flavours. Add ginger garlic paste and fry it for 1 min and add sliced onion, green chilli and fry it for further 1 min. Add green peas and cashewnuts and cook it till the peas are cooked with crunch. Now add this mix to the cooked rice or layer it and mix it slowly so that rice doesnt it broken. Now garnish it with fried onions and Potatoes and Coriander leaves. Serve warm. It goes very well with spicy curries or punjabi dishes like chole or matar paneer.
